Aging

The aging process can be oxidative or reductive. In the reductive way, every effort is made to exclude oxygen from the aging process, thereby preserving the primary flavors and aromas. In case of oxidative aging, on the other hand, oxidation and the interaction between the barrel and the wine come to the forefront. Initially, our winery followed the reductive approach, particularly with our young vines. However, our future plans also include robust barrel-aged red wines.
